How do I tell what version of NFS the system is running?

It can depend on the kernel. Latest 2.6 kernels should all support 2, 3,and 4. I really don't know of a way to tell. I think you would have to do some type of scan of the share to determine the nfs version. Seems like I seen a tool like this but where I am not sure. Something like stapprobes.nfs might work.

I am not sure but try using 'rpcinfo' or 'nfsstat' commands...

We can use nfsstat with specified parameters to check both client nfs version/server nfs version, and also supported nfs protocols and nfs version using rpcinfo. More info can be found in the following article: how to check nfs version in linux
