Mysql RPM or Tar?

I ran yum update.. and some packages I needed, ie. curl, openssl, mysql, and bunch of other packages where installed.

Is this OK, for these type of programs? For instance, mysql cant be started. 'cant connect to mysql.sock'

As far as curl and openssl, is this all I need to do?

I am a linux newbee myself, so IMHO, tar gives you more flexibility as to which features to enable.
And once it works - do not touch it untill your applications will require a new version
