You need to change /etc/fstab and your bootloader. If you aren't using a bootloader then you need to change your BIOS boot sequence.
Red Hat probably has both IDE support and SCSI support compiled into their kernel. If you have compiled your own kernel then check to make sure that SCSI support is compiled into the kernel and that it is not a loadable module.
