I don't know any source with all options described, there are too many of them.
It would be a good idea to start from the configuration you have now (it's in kernel-source package, filename is .config, you should be able to find it easily using locate). You can copy the file to another kernel source tree and when you run make xconfig (or make menuconfig or...) you'll have your old configuration loaded. Then you can remove what you think you don't need. There will be many such things. :)

think there will be a performance increase?

theres alot of things on boot or start up im not sure i need, deamons. And if modules are loaded from the kernel and i dont need them, why bother running them, bad part is like i said; i dont know what to look for. i just need a basic user setup no network services or anything. Any insight?

TIA

JUDOLIZARD, kernel parts and deamons are two different things. Deamons are usually separate programs, you can Configuration -> Mandrake Control Center -> System -> DrakxServices and you can turn off those you don't need (there's help for most of them). Turing off unnecessary services gives you better performance, should be easy to feel. Kernel compilation gives it, too. But smaller and harder to feel.
