Looking for Linux OS to be used as a Syslog server


I am new to working with Linux, but am eager to learn to implement into my jobs environment. I am trying to create a virtual server on VMware vcenter and esxi running on 5.5 that will be used as a syslog server. It will mostly be used to interact with Symantec Messaging Gateway 10.5.2. I spoke to a support staff from Symantec and he couldn't recommend it directly as to what to use, but he told me he used fedora in his own environment for syslog. I was wondering what is the best open source that OS that can be used for purpose of logging inbound emails only. I need to be compatible to VMware, but also allow me to hold at least a years worth of syslog if possible. What OS do you recommend? How much disk space should be given to the primary drive? or can I add a secondary virtual drive and have it log in there? Thanks.

Pick one you like. This is like asking what kind of car do you need to buy to get to work? Almost anything will do.

If you have literally no idea, pick Ubuntu Server.

My CentOS server (CentOS release 5.10) using Kibana has collected
Code:
Filesystem    Type    Size  Used Avail Use% Mounted on
/dev/hdb      ext3     25G  3.6G   20G  16% /kibana
since July 25th, 2014
but I'm only grabbing 3 hosts via (r)syslog at the moment.

One of those hosts is our mail server and it consumes the most amount of disk space on the kibana host.

Either Ubu or CentOS, it's a matter of preference, I guess.
