Well, 'easy' is a relative thing when it comes to mail servers. Postfix and Sendmail are both great options, they handle lots of mail, lots of features, and are scalable if things grow. They also hook up with web-mail options (Squirrelmail, etc.), to give you even more flexibility.
However, they are definitely not a GUI based, 15 minute install either. As with anything, you get out what you put in. Of the two, postfix is easier to install, and there are many how-to guides that should get you going quickly.
