linux is the kernel
CentOS 7.0 is the operating system built on top of that kernel

Linux is the name of kernel. CentOS, debian, fedora, ubuntu are distros which use linux kernel as the underlying OS kernel. Commonly they are also called as Linux (OS). And these distributions use differing applications in a sense. Though they have some same apps.
