They're just the names of the releases, Ubuntu 9.04 is Jaunty Jackalope.
8.10: Intrepid Ibex
9.04 Jaunty Jackalope
9.10 Karmic Koala
The new releases are every six months, once Ubuntu's installed, you can update to the new releases just like you do the rest of the software.

The first few paragraphs of the wiki page explain the version names and numbers and you will also find technical information about the releases there. Generally things like this can be found on Wikipedia or Google.

I checked for that on wikipedia, also, only the number/version match. I couldn't think of it off of the top of my head.

The numbering system is based on the year/month the version is released. Version 9.04 was from April of 2009. 6.10 was from October 2006. The names are just easy ways to remember them, they're fun indentifiers. They go down in alphabetical order.

7.04Feisty Fawn
7.10Gutsy Gibbon
8.04Hardy Heron
8.10Intrepid Ibex
9.04Jaunty Jackolope
9.10Karmic Koala (not released yet)
