Is MIME the process to enable emailing from web forms?

I am wanting to have a form on a website which allows a person to enter their email address and email their comments back to me. The website is being built to be run with Apache on Fedora with a mysql database. When I was using PowerBuilder on MS, I had to know the MAPI structure to create a similar client/server form.

Do I need to know MIME's structure if this is the process or can I just program it to send the email. I do not want the person's default email client on their machine to be automatically called such as some pages will bring up only Outlook to use to send an email.

Thanks in advance

Emailing protocol standards, different ways of encoding email sent, etc. particularly for sending email from a web site. A lot of things to read about this so I was wondering if MIME would be better than SMTP. The word 'structure' is probably the wrong term to use. If I still do not have it confused, more of 'methods' or maybe just a protocol that can be configured with supplying defined preferences to the Keyword sections.

Anyway, I have done some more reading on this and unless someone can recommend the best way to send email from a web form, then I believe I can use a simpler protocol.

I apologize for any confusion.
