I'm not familiar with "VMware Server Console", however I do know what "VMware Server 2" is.
To install CentOS5 x86_64, you should just have to download the ISO for the install and setup a Virtual Machine for it, but tell it you're doing RHEL5 instead. You will need a few "DataStores" setup in VMware Server first;
One for your Installation Media (like ISOs), and one for your Virtual Machines to live in.
I've included a walk-thru (ignore the 32-bit nonsense, I couldn't find my 64-bit ISO).
NOTE: You'll need the x86_64 ISO, a 64-bit capable system, and a 64-bit "Host" OS installed.
