But when should I do this, what am I missing?

Usually old PC's set the CD drive as preferred booting drive, and so long as there is bootable disk in the drive it normally loads first. So the solution is simply, when the installing is completed press open the CD/DVD drive remove the media and click (or machine restart) the PC. The BIOS will normally pass boot sequence into the Hard drive now in the absence of a medium in the CD/DVD drive.
Another way is to check the boot drive via BIOS configuration. I assume you can do this by hitting F2 or Del at the time of POST (right after switching the 'On' the machine).
Or you may try F9 or F12 or F10 at POST, then a dialogue for making choice on the boot drive shall be offered.
POST=
Power On Self Test. The brief moment after switching On the machine and before bootloader takeover.
Hope that helps. Good luck.
