What can I read to learn about using Ubuntu?

Start learning the command line, open the terminal and try it out, here you can find about the commands: http://www.oreillynet.com/linux/cmd/
Ubuntu is created from Debian, so if you learn about Gnu/Linux you will be in the right direction. Read a lot, here: http://linux.die.net/ you can find details about other things like programs. In the terminal you can also use the man command which means manual to learn about the commands or programs, try:
