how to switch kubuntu 11.10
 
I installed kubuntu 11.10 along side my Ubuntu 11.10 and during the installation process it asked what desktop I wanted kde or light (I think that was the option), well I choose the second one. I was wondering if I can change he desktop now to kde or do I have to reinstall kubuntu? Secondy is the much of a difference between the two?

To change to another desktop manager all you need to do is log out then log back in but choose the other desktop manager you want to use for that session.

In the attached screenshot if I had KDE it would be listed there

I just re read your post and now I am wondering what did you do? did you install another copy of Ubuntu but with KDE along side the Ubuntu with
unity? or you just installed another desktop manager on the installation you already had?

You know Kubuntu, Xubuntu, Lubuntu are all the same distro just using different desktop manager which you can install them all on the same Ubuntu 11.10 you already had
You can do that by typing

sudo apt-get install kubuntu-desktop

sudo apt-get install xubuntu-desktop

sudo apt-get install lubuntu-desktop
Each desktop manager comes with different applications so if you want to run them all you will have a bunch of applications that do the same task. E.g. Music player in Gnome is Rhytmbox, music player in kde is Amarok, Video player in Gnome is Totem, video player in KDE is Dragon Player, or Kaffeine.

Yep thats what I did "sudo apt-get install kubuntu-desktop" but durring the installation it asked what type of environment I wanted (or close to those words) and gave me the choice between 2. One was kde and the other simple (I choose simple thinking that both would be there when I log out to select later). Are both of these the same because I don't have the option just, kubuntu, ubuntu, and 2d ubuntu. I am trying to familiarize myself with a wide range of systems and environments so if it is different how can I access between the simple and kde? Or should, after I am done checking out simple, remove kubuntu and reinstall it choosing kde?

If you want kde then you should have choose kde desktop environment while installing the desktop environment. Now you need to install the kde desktop environment again. Restart the machine after installing the kde. You'll get the login screen and choose choose the desktop environment of your choice, kde also would be there. Like shown in the post no. 2 attached image.

How do I uninstall the kde to reinstall it? I can use the terminal to install programs but I haven't yet learned how to remove them with it.

I think you can do
Code:

sudo apt-get remove kubuntu-desktop
Another way is by using the Ubuntus software center, look there for Kubuntu-desktop and select it for removal.
You can do the same for other unwanted packages

I learned to never uninstall all of the kde programs through synaptic package manager today. I got to reinstall my ubuntu :) so I upgraded to ubuntu 12. It is a little different than 11.10 in that the side bar never leaves view.

Yo!
I dont know why you said you learned no to remove KDE from synaptic. You can actually install and unistall stuff for the system from there.
Also I dont know why you had to re install the whole system when you could just upgrade ubuntu 11.10 to 12.04.LTS from the upgrade manager.

Now about the Unity launcher on the desktop you can make it hide by turning on that option
to do that you have to right click anywhere on the desktop and select "Change Desktop Background"

There you will have two tabs one says Look the other says Behavior. So on the Behavior tab make sure the Auto-hide the Launcher option is ON.

If you want to customize Unity go to the Ubuntu software center and install MyUnity that tool let you modify Unity the way you like best

I had to reinstall the OS because I went through the synaptic Package manager and removed everything that was associated with kde. Needless to say that pretty much removed my OS. I'll still use the synaptic but I won't remove neccessary programs without looking them up first. :) I love a good learning experience. And thank you for the info about hiding the launcher.
