How to set default application
 
I have 3 text editors I use. In Linux Mint gedit is the default editor. How do I make another editor the default?

I have two applications that will open .doc files. How do I select which application will open the .doc file when clicked on?

You didn't mention your linux distro.

for redhat, fedora
edit ~/.bash_profile
export EDITOR=your editor

for ubuntu & debina
sudo update-alternatives --config editor

right click on file goto properties ->openwith tab

choose your application

It depends on your distro. Debian tends to make a symlink in /etc/alternatives/ with strange names like:
/etc/alternatives/x-www-browser
/etc/alternatives/gnome-www-browser

or for editors:

/etc/alternatives/gnome-text-editor -> /usr/bin/gedit

YMMV and so might your distro. And there's probably a more proper administrative way to change those than rm and ln -s.
