Help with software mirror (Raid) setup in startup

I have an old version of RedHat running on a system that has a software raid or mirror running from the startup file. I need to replace both hard drives because they have been around for a long time and I'm afraid they are going to fail soon.
I have cloned disk0 using clonzilla, but I cannot get the system to boot unless it sees disk1 (mirrored drive)during startup. I believe I could get the cloned drive to boot if I broke the mirror before I cloned disk0. I'm just not sure how to break the mirror, or what file I would edit.

I must mention that the reason I need to clone this system is because I no longer have the accounting software on disk; and no support from the software company. Any help would be greatly appreciated..

For a start we'll need the exact RH version (and kernel would be nice).
Also, fdisk -l, mdadm --detail, if possible

My not so sophisticated approach would be to remove both hard disks from the server, temporarily adding them (one after the other) to another Linux box where the data cloning is done to a new hard drive. Then put back the new hard drives into the server.
I have mobile racks on most of my computers to make adding/removing hard disks much more painless.
