Banshee, exaile (with exaile-plugin-ipod), and/or gtkpod would likely be useful (I don't know for sure, given that I don't have an ipod.) I found the preceding three programs by searching synaptic on my system for "ipod" (looking in "Description and Name"). Given that you have synaptic on your system, you too could do this.

amule has worked well for me in the past (it can be a bit tricky to get going, but once it's working, it's great. Disclaimer: it's been a while since I've used it, so I don't know if it still works as well now.)

Since your original question (that being, what's an easy Linux OS to start with) has been answered, it might be a good idea to start new discussion threads for any new additional questions you may have. It sounds like it is working pretty well for you, if the video,sound, mouse, keyboard and internet are working. You will not be able to install any plugins or etc with it running from the cd, You will need to install it to be able to save plugins etc. When you get it installed and have everything working then you can come back for help with plugins etc. You can also just do a search for flash plugin and it will step you through it.

For simplicity and ease of use, I'd have to recommend Lucid Puppy Linux, which is the latest of the puppy releases. It has most of the common applications you want, is easy, and takes up very little room on any disk. The iso file you'll download is about 100mb in size. Don't let that small size fool you, though. It's PACKED with useful applications, and when run from cd as a live distro, it will run entirely in ram, making it blazingly fast. I've never tried it on a system without good success. When you shut it down the first time, it will ask you if you want to make a "save" file on your hard drive before shutting down. This will save all of your preferences and settings. You can put that save file on the hard disk or thumb drive, if you wish. This "save-file" on shutdown will be the only time it accesses your hard drive, unless you specifically direct it to otherwise.

Regardless of linux distro you choose, you will have to get used to the different names for common applications, such as Geany, leafpad, or Kate instead of Notepad, Impress instead of PowerPoint, Abiword instead of Wordpad, etc...

For converting video, handbrake wins in every aspect.
Code:

apt-add-repository ppa:stebbins/handbrake-snapshots
will add the handbrake repository to your sources. Then
Code:

sudo apt-get update && sudo apt-get install handbrake-gtk handbrake-cli
to install the gui and command line versions. It allows you to convert from nearly any format to nearly any other. DVD to iPod format is what I typically do. A full DVD will fit in roughly 1GiB. More info on their website.
