If ubuntu is in control of the boot process then eliminating windows is no problem.
First you need to tell us if it's a true dual-boot or a wubi installation.
If it's a wubi installation you'll have to reinstall ubuntu because it runs within windows or should I say it's just a windows file. If you installed via cd or dvd then you can do it

Now you can use Gparted to remove Windows and can expand your Ubuntu partition.
