Disabling Mail Server

I have web hosting on a linux server and have recently been the victim of a spammer who has used my mail server through which to send spam. My account has been suspended until I can fix the problem. I have decided that the quickest and most long-term response would be to disable the mail server altogether for my domains as I am using my ISP and Hotmail email accounts now as contact emails for my websites. Is it possible to disable the mail server for my domains and if so, how can I do this?

Thank you in advance for your response.

What OS do you use? What MTA? Do you have a firewall?
