you have to have testing or unstable repo's for the new wine to work I believe. I'm pretty sure you can add a sid repo (example):
deb
http://ftp.us.debian.org/debian/ sid main contrib non-free
As long as you just install wine with that and then disable it and re-run update you should be fine. Testing might work too, so just replace sid with squeeze/testing and try that. I myself use squeeze/sid to get wine working and it works over here.
