Okay...I'm a Linux noob.

That said, I have a AMD Athlon 64 3500. I want to install CentOS 4.3 for dual-booting (I need my games). If I install the x86_64 version can I still install/run the i386 versions of software as I can in Windoze?

Yes in fact the CentOS-4.3 x86_64 install is a mixed-mode installation. This means that both x86 (32-bit) and x86_64 (64-bit) applications work just fine.

You may want to only have some applications to be 32-bit only, firefox, mplayer and associated plugins(firefox) and/or codecs (mplayer and mplayerplug-in) come to mind.
