To boil this down, to use 4.3 to compile MAME on Debian Squeeze, per your suggestion I am using:

export CC=gcc-4.3 CXX=g++-4.3 && make
There are several bug reports that say 4.4 will not compile MAME 0.146 or 0.147. It is still compiling, but I have 4.1 installed as well just in case!
