The best book for learning Linux from a complete novice starting point has to be 'Linux for Dummies'. The book is very simple easy to understand and starts out with the basics and builds to more advance stuff. The one i got was a complete refernce one that had like 6 or so books all in one. I got it years ago and so its information about some of the distros might be kinda off out of date by now, but its other stuff (such as how to set up and install various software and servers) is still useful.
You might also want to get a full reference book like 'Running Linux' or some other general reference linux book.
