Using 1 NIC for DHCP the other for all other networking

I am running Sarge Debian with a 2.6.8 Kernel

My box has 2 NICs in it (10/100 and a gigabit). I want to use the 10/100 for DHCP serving only and the gigabit for all other network traffic.

I can get the 10/100 to be the DHCP by editing /etc/default/dhcp and setting
INTERFACES="eth0"

How do I get all other network services to use the gigabit?
Thanks
