ssh socks proxy question

I have 2 network connections (eth0 & eth1) on my linux server. They're on separate subnets (192.168.0.x and 192.168.1.x) and both are internet facing.

I want to ssh into this server from the eth0 subnet, and enable ssh dynamic port forwarding (socks proxy) that will use eth1 for outbound access.

Can I do that with some iptables commands?

Why do you need to do anything with iptables?? Aren't your default routing tables up to the job? What do they look like?
