It all depends on what server(s) you have running. You can have an FTP server, a http server, samba server and the list goes on.
To find out what you have running, open a konsole, and run the command '/sbin/ps aux' without the quotes. You will have a long list of stuff. Have a look for your servers there. If you have samba server running, you will see 'smbd' ( no quotes ). NFS shows up as 'nfsd'.
Do you have Webmin running? If not, you may want to install it. You can configure and manage most servers from Webmin, from the server, or from a web browser on any other machine that has ip access to the server.
As for your root password, there are tutorials around on how to delete and how to create a new ( known ) root password. Off the top of my head, I believe you have to boot to single user mode, to change the root password, but I would have to look the rest up. If you google it, you should be able to find a how-to.
