Privoxy, editing config in web interface as user

Anyone know how I can run Privoxy and use the web insterface to edit the config files?

I should be able to use the web interface, same with the toggle on/off; but every time I try I get an error that says to contact my administrator because I do not have privileges.

If I try to start it with the -user flag it gives me an error saying it cannot access the log on /var/log/privoxy

I tried creating a folder with my username in my home directory and copying the files there.

Still didn't work.

Even tried changing the permissions on the log file. Nothing. What am I missing?
