Is there a way to find the current mbps my server is pushing and then save to a file?

You could glean stats from /proc, but the counters reset so you'd have to script around that (trivial).
You could use something like Ntop or MRTG, but if you don't want dependencies or need fancy graphs that's overkill.
You could use Vnstat which is simple, CLI mode and saves its data in it's own database.
