How would I go about establishing a VPN connection from IPCop to my server?

I have a Gentoo Linux server
A computer with IPCop
And a laptop...
How would I go about doing this:
Getting everything setup to where I can access my files/database/etc on my server via VPN. I plan on using FreeS/WAN since that is the only thing that people say will best work with IPCop and Windows 2000 Pro.
I believe that is secure also... IPSec is better than PPTP.
What would I need to do in terms of setting up my network, config files, and systems to make it where I can connect to my Gentoo Linux server and get my files off of it via Samba?
Is there anything special I will have to do in order to get the VPN setup where it ONLY goes to my server, and nothing else on my network. I am dying to be able to work while one the road, and I believe this is the best way to do it...
Can someone give me a guide in there own words...
Or a complete walkthrough on how I should get a sucessful VPN.

(Imagine me at a hotel)
Laptop ---> Hotel Connection ---> My connection ---> IPCop firewall ---> Gentoo Server
Now, the "better" way to ask this is:
Is there any special stuff I have to do in order to get IPCop to communicate and get my files so that I can get to them on my laptop.
