I have had Host Only working just fine in my Windows virtual machines for a long time. But I cannot get it to work with Linux VMs.
I deactivated my Bridged and NAT adaptors to prevent confusion, so that any connection is due to the Host Only adaptor, and I do have it activated. But I cannot get a connection.
Distribution: OpenBSD 4.6, OS X 10.6.2, CentOS 4 & 5

Have you configured them as shared folders via VMware? If not, you probably need to use NAT or Bridged networking since the address space for the host-only network is only shared by VMs, not the host.
Yes I have configured shared folders with VMware. My Windows VM reach them just fine. I don't want to use NAT or Bridged because they will show up all over the lan, and not be private anymore. I want Host Only because I want the guest and host, all one computer, to communicate with each other and not the LAN.

Well then it's a Samba problem of some sort. I stay far away from Samba, but there are plenty of people around here who have slogged through various Samba issues.
