Hostname changing

I want to change the hostname of my Linux box, but will I need to restart inetd in order to get the change happening?

I really don't want to have to reset the machine - it's running important stuff.

No you shouldn't need to restart just use the hostname command:
hostname my.hostname.com

Then add an entry for that domain beside the loopback address in /etc/hosts
