Your thoughts, please... I don't need a file server, just basically LAMP with not-so-much in the databases and a mail server (Postfix).
That's basically it. What do I want for HDD space? I have, well as much as I want (for the most part), but I'd rather only use 30GB, 60GB max. Will 30 do it?
Hard to say since you don't say what you're going to be serving up from the machine. The LAMP components themselves don't take up much space (maybe a gig or two at the very, very most) so it depends on the size of the data. If you're just hosting a few small sites/scripts it can bew done in under 5 GB. If you want to host your own version of Wikipedia, well ... you get the idea.
Edit to add: Don't forget to estimate the size of mailboxes. You can implenet disk quotas if you're worried about people's mailboxes growing too big.
