Why not - a laptop is just a computer.
I'm using a very old laptop (CompaqArmada E500 w/o battery) as just that, a home webserver for internal / webdevelopment purposes.
I don't think you should allow it to go into suspended mode though, it has to be "awake" to function (my laptops are old, no suspend mode, so I'm not really sure).
I agree. No reason not use a laptop as a server. I have an old HP Omnibook 6000 as a mpd (music player daemon) server. It runs 25 hours a day. I cron up mpc commands to start, stop and change the music.
I have turned off all the screensaver, suspend, hibernate responses to closing the cover.
