Do you mean encrypt between the keyboard and the computer so that your keyboard cable does not disclose compromising emanations? That's mostly a hardware problem requiring a new keyboard. https://www.schneier.com/blog/archiv...ly_eavesd.html
Obviously encrypting the keystrokes in a way that doesn't change amounts to only a monalphabetic substitution that os broken quickly by methods such as counting frequency and counting neighbours.
If someone is obtaining your keystrokes by sound then encryption will not help. You will need to exclude listening devices from the area. That probably requires being deep inside a building far from windows.
