Kernel compile guide

I want to build a lean and mean kernel on a couple of boxes I have for the best performance possible. Is there a guide that exists that describes every option in 2.4 and 2.6 kernels? I want to strip out everything as much as possible on these without breaking anything and I am having a hard time finding reference to what some of the options are.
