It depends on the player. Any player that connects through usb and shows up as a usb mass storage device will generally work fine under linux. They use standard usb protocols and act just like a flash drive. This covers most inexpensive ones like from sandisk which are little more than a flash drive with an mp3 chip to decode mp3. Some mp3 players have a proprietary protocol for communicating with the device and you need special software to do that, usually windows only, but a lot of that has been hacked and can be used under linux. The ipod is kind of like that as there is linux software which has been produced which can give you the full functionality.
