If I unplug my current video card and plug my new one will it work out of the box or will I have to install something before the switch?

From my experience, Ubuntu should autodetect the new card. If your old card was an nvidia geforce, it should automatically run on the old drivers (but upgrading the drivers might still be a good idea). If it does not detect it automatically, you might be dumped with a terminal screen, where you will manually have to edit the xorg.conf file, to change the driver over.
