I can't speak about that particular camera, but it is not unusual for specifications to list only Windows and Mac. I've purchased USB hard drivers, enclosures for spinning drives, even HDMI adapters and cables, and other items which worked just fine with Linux, even though the marketing literature mentioned only Windows and Mac.
Most big manufacturers, just like most consumers, don't even think about Linux, so seeing no mention of Linux in the specs means nothing.
My experience agrees with John VV about the camera's memory card; you should be able to stick it in a card reader and go. Depending on the
type of USB connection the camera has, mounting the camera itself as a mass storage device may not be as transparent as it ought to be.
