How do I arrange my sent items to show who I sent them to instead of just saying my name?

Why do you have sender shown at all?

At the right end of the line of column titles is a cryptic icon that you can click to let you select which columns are visible in the Sent folder. Start by choosing the columns you really want.

Next use the sort by option in the View menu to decide how you want it sorted.

You can also set the sorting by simply click on column titles. But I think using the menu might make it clearer what you are doing.

I'm going to assume you are using a recent version of Thunderbird (>=3.0.4). When you are in the sent folder, there is a small icon that looks like a two columns in a table. Make sure "recipient" is selected. Then click on the larger "Recipient" header button, which when you hover your mouse over it will say "click to sort by recipient" in the tooltip that appears.

How does that relate to my copy 2.0.0.24 from 2010/02/28?

2010/02/28 sure isn't current, but I thought it would be considered recent.

I would not be able to identify the icon from your description. (I'm pretty bad at interpreting what icons are supposed to look like). The position (if that is a stable characteristic) may be more helpful.

I'm not sure whether a sorting question was implied by the OP's post. The core of the question is where is the "select columns" dialog that a reasonable person would expect in the view menu. The answer is that icon whose position I described for version 2.0
