Where i can find statistics of the use of GNU/LINUX in several countrys or corporations?
Where i can find statistics of the use of GNU/LINUX against Windows or Mac?
Where i can find statistics of the use of iptables in several countrys or corporations?

You can't. Such statistics are not collected in any reliable way.

There are a number of studies attempting to compare "market share" and so forth, and all have failed to have any useful meaning. Everything ends up handwavey, like the wikipedia entries.

Just think: how would anyone go about finding this stuff out?

Some organisation track statistics for specific stuff - like serverwatch.
