RH 7.3 is very stable and ran quite well for me however I've been running RH 8 for the last few months and haven't had any problems. I use it at work and at home with no problems.
I've ran RH7.2 for a year and then skiped 7.3 and went to 8. So far I've seen some little things that have made me want to go back to 7.2 but I'm sticking with it, I would say when you do pick it try to stay with it for a while that way you get to know where everything is but as for which is better I would say they have there goods and there bads. But if you ask me as to which you should run I would 8 because (if your new) it will have more help for you.
