Offline Dial-Up SMTP Server Setup

Does any one know where I can find a (hopefully "simple") guide on how to setup an SMTP server such as postfix (or exim, etc.). I am using a dial-up connection with a dynamic IP (no DHCP). I am mainly interested in using it to send email (not to receive email) in collaboration with mutt. Thanks in advance.
