I then looked under "Edit" > Preferences.
Under Preferences I found the following tabs:
Views, Behavior, Display, List Columns, Preview, and Media.
Checking each of the above, I found no help.
And so the "problem" remains.
Try launching nautilus without the gtksudo (there's no need to have root privileges to fix this problem since it applies only to a user's preferences) and have a look in the "Display" tab as suggested by Wim Sturkenboom above.

First of all, no need for gksudo.

edit -> preferences -> display

I have three boxes under icon caption. The first one on my system says None. If I change that to Permissions, I get the permissions (after a refresh of the nautilus window) as you showed us and when I set it back to None and refresh they're gone again.

Ubuntu 8.04

All right... I rechecked the above and found the area describing the adding of permissions. It is under the "Display" tab., under "Icon Captions"
That did not remove the offending permission entries from my files and folders.
Problem still exists, and I am beginning to think "clean install".

This problem has been solved. Each partition has been cleared by simply clicking on "none" under the "Edit">Preferences>Display>Icon Captions.
My bad was trying to clear all of the folders with one click.

I regret causing all this fuss, and really appreciate the responses.
