If you're using Linux, you don't need to restart the computer for a new Mozilla install. (Unless you're installing a new kernel, XFree86, or desktop-KDE/GNOME/etc, or other low-level program, you shouldn't have to restart--many of us install "nightlies", which are daily updates, every couple days.) Your problem is most likely that your link is still set up to point to your old install. Simply right-click it, adjust it to the correct folder, and you should be set. This seems like an obvious thing install should do, but if you're testing new builds, you'll like the fact that you can run new versions side-by-side with the old ones.
