mount --bind, vfat and permissions

I recently discovered the bind option to mount a subpart of a filesytem somewhere (and this was really useful to share some directories from fat32 partitions into an anonymous proftpd account.)

My question is about the permissions (umask or else) of the binded mount:
could we change those permissions? or at least increase limitations on it (by adding an other umask for example)?
