How well do the programs in question work under wine?

My personal experience with wine is not very good. Dreamweaver with wine feels sluggish and gives you a feeling that you are running some third class application. I have not tried Fireworks with wine though.

problems with wine/dreamweaver

I got it running good but not good enough. I couldn't get copy/paste and templates to work at all. I tried it under several distros and under KDE and XFCE just in case that was the problem. No luck. And quanta/bluefish/screem just don't cut it compared to dreamweaver.
