Yes, you can define whatever keys you want, both in bash and screen. Bash uses the readline library for input, which gets it's key bindings from ~/.inputrc or /etc/inputrc (see the READLINE section in the bash man page for syntax).
However, you might prefer to change the binding for screen. Personally, I use ^W which is unused in all my other apps. You can try this on the command line with -e^Ww (that is, ^W is the escape key, and you press w again to pass a literal 'w' through to the app). You can set this permanently in your ~/.screenrc with 'esacpe ^Ww' or whatever key you want. See the screen man page for more details.
