Like dive said, if there isn't an install.sh or so named file in the first CD, there are a lot of installers on the web, here is one though I don't know if it works properly, I never liked UT2003 more than the first UT and when UT2004 came around it replaced'em all
There is an installer on the last CD, though it is not really good working, but it'll do the job, you just have to be patient ( took me half an hour or so usually, since it checked cdroms every file copied )
I'm pretty sure that the linux installer comes in one of them CD's ...
Looks like there is an updated installer (patched) for UT2003 on unrealtournament.com
