To have exactly the apps you want in exactly the places you want them tailored specifically for your system and no other, with a boot process exactly how you dictate and being able to understand the system from essence on out, rather than having to deconstruct what somebody else did to figure out what's going on. Which, actually, you won't get by building LFS - you'd get a distro I'd never use in a million years. But LFS will help show you how to get there. Flipside, if everything's how you want it already or if you prefer to learn through deconstructing something that already exists, then there's not much point.

Why would anyone want to risk losing their life to travel out into space?

My guess, to learn more and to experience it. I'm guessing this can be used in comparison in why people would want to create and do LFS. I did it originally to learn more about Linux personally.
