Check out the AdminsParadise VoIP PBX and fax server
It has a LIVECD and an automated installation cd.

All For Free!!

It sets up web based faxing, a full featured voip phone system,
with Music on hold, Interactive Voice Response, Scheduled Conferencing, Paging, parking etc. -- all with web based administration.

Download the iso
burn it to cd
pop it in a computer
Voila!

The site also has flash based tutorials and walkthroughs of the system.
