I think Ubuntu supports Chinese (not sure which variant), so Lubuntu, which has the light-weight LXDE desktop, should also do so.

Most Linux distributions have support for East Asian languages. Setting the locale, or one of the locales, to Chinese will enable the system to display the language. Ibus or SCIM will need to be installed to input characters. Also, most of the distros that support Chinese allow the use of both regular Chinese and so-called simplified.

If one wants to go that route, there is also Deepin. I believe it is also an Ubuntu re-spin.

Deepin and Kylin are Ubuntu based. Kylin uses the Unity desktop, which is an acquired taste, while Deepin has its own. There's also StartOS, an independent Chinese distro using Gnome customised to look like XP.
